Collector of Souls lies deep in the heart of the Swan Valley. Legend has it that the Distiller of Collector of Souls, known simply as "The Collector" had a unique gift for crafting spirits seemed to capture the essence of each patrons soul. With each sip, patrons experienced a journey of flavours that stirred their deepest emotions and memories.

Holy Water Vodka

Proof of Divine Distillation., our Holy Water Vodka is a celestial blend of purity and perfection. Distilled to perfection, each drop embodies an essence of smoothness that transcends ordinary spirits.

Psychopomp Pink Gin

A nod to the afterlife, Psychopomps are creatures with the responsibility to escort newly "collected souls" in their journey from Earth to Beyond, or in the case of our pink gin, heaven. London style botanicals with Strawberry and Raspberry flavours and a touch of sweetness.

Gin Reaper Dry Gin

One sip. Soul surrendered. Classic London Dry Gin botanicals - Juniper, Coriander, Citrus, Orris Root, Angelica. Strong and smooth.

Lovers Yuzu Gin

Infused with fruit from our own orchard, this bright, citrus-forward gin is a tribute to the legend of the timeless lovers featured in our venue photo gallery, Amelia and Gabriel — whose souls have danced through lifetimes to find each other again at the Collector of Souls. Zesty, elegant, and unforgettable, it’s the heart of our Yuzu Gin Crush cocktail — a sip of destiny, stirred with memories that never fade.

Poet's Floral Gin

Inspired by the legend of Lila Montgomery who adorns the wall in our venue gallery. Lila was a poet who found her voice with a single sip. This floral-forward gin is a sensory sonnet. Juniper leads, but the bouquet of rose and botanicals lifts from the glass. It’s a celebration of creativity and expression.

Aristocrats Single Malt Moonshine

This smooth, unaged single malt moonshine is named after the legend of an Aristocrat, Lord Alistair Belmont, whose grief over the loss of his beloved Lady Evelyn led him to Collector of Souls. With one sip of his drink, he faced the deepest corners of his soul, where love and loss linger forever. Smooth, bold, and unaged — this single malt moonshine is all character, no compromise. Raw, refined, and made for those who like their spirits with attitude.

Nomads Blue Agave

Crafted in the spirit of the legend of Leo, The Modern Nomad who's legacy is immortalised on our gallery walls, this tequila-style blue agave spirit captures the essence of adventure and self-discovery. Distilled from fermented blue agave, it’s bold, earthy, and full of character — just like the stories collected on the road less traveled. Each sip is a tribute to faraway places, chance encounters, and the timeless pursuit of finding oneself

Malone's White Cane Spirit

Named after Eddie "Blue" Malone, the legendary 1950s jazz trumpeter whose soulful performances captivated the Collector of Souls. After his final performance, Eddie’s spirit was guided by The Collector through an elixir that unlocked his memories of triumphs and struggles. Smooth, bold, and timeless, this spirit embodies Eddie’s legacy, which lives on in our gallery. Distilled from fermented molasses, aged on oak, and filtered to perfection.

Every bottle of our liqueur is a story in itself — rich, bold, and handcrafted with soul. Infused with locally sourced ingredients and a touch of alchemy, our liqueurs are smooth, seductive, and impossible to forget. Sip it neat, over ice, or in your favourite cocktail — either way, the magic lingers.

Frenchman's Limoncello

Our French farm hand is hard working but has poor English and he accidentally picked all our unripe lemons from our orchard when directed to pick limes! When life gives you unripe lemons, you make limoncello! Strong lemon flavour with a sweet finish.

Black Raspberry Liqueur
Blackberries, Blackcurrant and Raspberries power this deliciously jammy spirit.

Butterscotch Schnapps
A classic buttery caramel spirit with a warm and smooth sweetness.

Coffee Liqueur
Made with locally roasted Yahava coffee this liqueur is the base flavour to our Espresso Martini. To recreate at home add one shot Coffee Liqueur and one shot Holy Water Vodka to two shots off coffee and shake with ice.
